Supporting students through nutrition education: tasting simple breakfast soup with plenty of vegetables

The Health Service Center held a nutrition program, "Easy Breakfast Soup with Plenty of Vegetables Tasting Event," on April 21 and April 28 at the Main Building of Natural Sciences and the General Education Lecture Hall as part of student support initiatives.

This tasting event aims to prevent students from skipping breakfast by introducing simple recipes, such as soups.

Student Crew, the volunteer group of the Health Sevice Center, provided takeout soup along with recipes under the guidance of a registered dietitian. The menu was designed to promote student health and featured "Vegetable Soup Made with Tomato Juice" and "Almond Milk Chè (Vietnamese-style sweet dessert soup)." These dishes were made using tomato juice and almond milk provided by Kagome Co., Ltd. The chè included Noto Dainagon red beans, purchased during a disaster relief visit to Suzu.

On both days, a large number of students gathered, and all servings were sold out at both venues. Buyers shared positive feedback, such as: "The Whole Vegetable Soup was hearty and satisfying, with a tomato-based broth complemented by ground meat, vegetables, and macaroni—it was delicious." "I couldn't believe it was made with juice! The tomato flavor was strong and tasted great." "The Chè was well-balanced, with ingredients like shiratama (rice dumplings), banana, and red beans blending perfectly with the almond milk. It was easy to eat and very tasty." "The Vietnamese-style sweet soup was refreshing and enjoyable. I’d love to try making it myself." Overall, the event was well-received.
